Pineapple Fajitas

I love pineapple and tend to really miss it once the fall/winter season comes along. I came across this recipe, and it just sounded so good to me. We tried this tonight and really liked it. I used canned pineapple, but I am sure fresh pineapple would be even better. So here it is:
Pineapple Fajitas
2 lbs. chicken cut into strips
1 T. olive oil
1 each medium red, green, and yellow peppers cut into strips
1 medium onion cut into wedges
2 T fajita seasoning mix
1/4 c.water
2 T honey
1 T. dried parsley flakes
1 tsp. garlic powder
1/2 tsp. salt
1/2 c. pineapple chunks;drained
**Cook chicken in oil for 4-5 minutes. Add peppers and onion and cook 4-5 minutes more. Combine seasoning mix and water in a bowl. Stir in honey, garlic, parsley and salt and stir into skillet with chicken. Add pineapple and stir for 1-2 minutes or until chicken is done. Serve on flour tortillas.
I served this with Mexican rice and fresh fruit.

SIDE NOTE: I just have to say that I got both kids to bed before 7:00 pm tonight. I LOVE the time change!! Now I have all night to get stuff done. :-)

it always throws me off the first few days...but i love the early bed time too. :)

Yummy! I'm totally trying this recipe out! And, it's weird to live in AZ right now and not go through the time change. I forgot that it happened last night :-).

speaking time change --I've had 22 hours of sleep in the last 2 1/2 days. This is nuts!

I can't wait to try it out. I am so excited. I have some chicken in the fridge that I need to cook up anyways.

Grant went to bed at 7:30 last night...i actually got laundry done. I'm sure he'll get used to the time change, but until then...slight freedom:)
