This is one of the BEST noodle casseroles I have ever made. Isaac and Seth loved it too, which makes it even better. Thought I would share it with you.
Chicken Noodle Casserole
You Need:
4 chicken breasts, cooked and cubed
1/2 C. chopped onion
1/4 C. chopped green pepper
Butter or Margarine
3 Tbsp. flour
1 1/4 C. milk
1 can cream of chicken soup
1 small jar of diced pimentos(find these by the olives at your grocery store)
2 cans (8 oz) sliced mushroom pieces(juice drained)
stuffing mix (I prefer Peppridge Farm brand NOT Cubed)
Cook chicken first(boil) and allow to cool. Cut into pieces and set aside. Cook egg noodles according to directions on package. In a saucepan, saute onion and green pepper in margarine. Make a white sauce of 3 Tbsp. margarine, flour and milk. Combine sauce with onion and green pepper mixture and bring to a boil. Add cream of chicken, pimentos, mushrooms and chicken. Combine this with the noodles. Place in casserole and sprinkle with stuffing mix. Dot with butter (my preference) or margarine. Bake (covered with tin foil) for 30 minutes at 350 degrees, until bubbly and lightly brown on top.

I used Target brand Egg Noodles, extra wide. But you can use any brand of egg noodles you want, I would just recommend you to use the extra wide.

Yummmmmmy. I wish I could make it here but I don't have soup or stuffing. I am just going to file it away for sometime 3 months from now. Thanks for sharing. I am always on the look out for meals that kids will eat.

Jess-how many noodles do you use? I could only find a huge pkg at the store which I'm sure is too much. What size pkg do you use?

I used a 16oz package of noodles. I would say to use 3/4 to the whole package. It does seem like a lot but we had enough food for two nights. I love leftover nights, less dishes and time:-)
