Ahh. . .sweet Zucchini Bread

This Zucchini bread recipe is so super yummy!
I love to make it around this time of year with fresh garden zucchini.

Zucchini Bread

-3 eggs -1 cup oil -2 1/2 cups sugar
-3 tsp vanilla -1 tsp salt -1 tsp soda
-1/4 tsp baking powder -1 tsp cinnamon
-2 cups grated unpeeled raw zucchini -3 cups flour

Combine eggs, oil, sugar, and vanilla and beat throughly.
Add sifted dry ingredients and blend well.
Stir in zucchini.
Bake in two loaf pans or a 10-cup bunt cake pan that have been sprayed with nonstick Pam.
Bake at 325 degrees for 60-65 minutes, or until done.
